RAVIOLI WITH SUN-DRIED TOMATO AND BASIL


This is pure pasta comfort food right here! You get so much flavor from the sun-dried tomato and basil. You wouldn’t believe how easy and delicious this pasta is, that is, until you try it!


INGREDIENTS

 packet fresh Ravioli
1 tablespoon olive oil
1/4 cup Sun-dried Tomatoes, chopped
100 to 150ml pasta water
3 cloves garlic, minced
1/4 cup Parmesan cheese, grated
1/2 cup Fresh Basil
1 can Tomato sauce

Salt, to taste
Pepper, to taste

PREPARATION

1. In a large pot, add boiling water. Add olive oil and salt before adding the fresh ravioli. Boil pasta according to directions on package. Drain well and reserve 100ml to 150ml of pasta water.

2. In a deep skillet on medium heat, add olive oil. Sauté garlic and sun-dried tomato until fragrant.

3. Add the tomato sauce and the reserve pasta water. Cover and let it simmer for 3 to 4 minutes. Reduce heat to low and add the ravioli and grated Parmesan cheese. Stir evenly to coat and adding in the fresh basil. Let simmer for another 2 minutes. Season with salt and pepper to taste.
