Thai-style grilled chicken bursting with flavours. It is one of the tastiest things you’ll ever pull off your grill! The number of ingredients can seem daunting, but trust me it is so easy to prepare.


1 whole chicken
1/3 cup brown sugar
1/3 cup evaporated milk
1 teaspoons ground white pepper
3 tablespoon oyster sauce
1 tablespoon light soy sauce
1 teaspoon Maggi seasoning sauce
1 tablespoon Apple cider vinegar
1 tablespoon sesame oil
1 tablespoon vegetable oil
2 teaspoon chicken bouillon powder
3 teaspoons turmeric powder
1 tablespoon fish sauce
2 stalk lemon grass
5 to 6 cloves garlic, minced
1/2 cup fresh coriander, finely chopped (optional)


1. In a food processor, add all the ingredients except for the garlic and blend into a paste. In a large bowl, add the paste and marinade the chicken.

2.In a pan, add vegetable oil and add the garlic, cook until fragrant and immediately add it to the chicken marinade and mix well. Marinade the chicken for at least 3 hours or leave overnight.

3. Prepare your bbq. Once ready, place the chicken, skin side up. Cover grill and let it cook for 45 minutes. Then carefully flip chicken and place, skin side down. Cover and cook until skin is crisp. Use the extra marinade to baste onto the chicken. When I was making this Thai grilled chicken recipe, it took about 1.5 hours until the chicken were fully cooked.
